『ひれ酒用ふぐひれの乾燥～動画付き～』

皆さん、こんにちは。
クレドの森内です。

今回のテーマは
『ひれ酒用フグひれの乾燥～動画付き～』について

これまで２～３日かけて日干しして乾燥させていた『ひれ酒用に使う
フグひれ』を「除湿乾燥」という技術を使い、サンプル乾燥して頂きました。

動画では１時間の乾燥で、１３０ｇの生ひれが４０ｇにまで
水分を飛ばし乾燥。

最終的には、動画終了後３０分程度追加で乾燥（合計１時間半）し、
生ひれは２０ｇまで軽くなり、ひれの根っこ部分（分厚い部分）も完全に
乾燥できました。

ひれ酒特有の「香り」も問題なく残り、委託乾燥をお願いする予定と
なりました。
